It’s fall and if we start now we might be able to bake all our favorite pumpkin recipes before Christmas baking season begins! These cookies are always a huge hit and my kiddos gobble them up before I can take them to friends and neighbors. They have the perfect combination of spice, chocolate, pumpkin, and chewy!
Pumpkin Chocolate Chip Cookies
1 cup softened butter
2 cups brown sugar
1/2 cup white sugar
3 teaspoons vanilla extract
1/2 cup + 2 Tablespoons pumpkin puree
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
3 cups all-purpose flour
1-12 ounce package semi-sweet chocolate chips
- Preheat oven to 350 degrees.
- In a stand mixer, combine the butter and the sugars until mixed well. Add vanilla and pumpkin and mix until smooth.
- Whisk all the dry ingredients and add to the wet mixture until just combined. Mix in chocolate chips.
- Bake rounded balls on parchment lined baking sheet at 350 degrees for about 12-14 minutes or until puffed. Cool.
