How we love minty flavors at Christmas time!!!!! We have one month to bake all our favorites! This one is a fun one especially if you have friends and family who don’t love mint and chocolate (gasp). It’s cookie dough with crushed candy canes and white chocolate chips.
Ingredients
2/3 cup butter
2/3 cup chortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
3 1/4 to 3 1/2 cup flour
1 teaspoon baking soda
1 teaspoon salt
1 bag white chocolate chips
12 regular size candy canes (or 40 small ones) crushed
Directions
Preheat oven to 375 degrees. Line baking sheets with parchment.
In a bowl fitted with a stand mixer, beat butter and shortening together until fluffy. Add the sugar, beat. Add the eggs and beat well. Add vanilla.
In a separate bowl, combine flour, baking soda, and salt. Add to mixture and mix until combined.
Add white chocolate chips and crushed candy canes.
Form balls out of teaspoons of dough. The smaller the better with these.
Bake 8 minutes.
*Note – adding candy canes to cookie dough will make the dough spread more than normal. Bake a few to test. If they are too flat then add 1/4 cup more flour. Ours needed 3 1/2 cups of flour.
