This is one of our ALL-TIME favorite cookie recipes! It’s a little spin on a traditional oatmeal cookie The secret ingredients are coconut and Rice Krispies!
Sometimes I substitute a little wheat flour and offer the cookies to the children for breakfast! Yes! Cookies for breakfast please!!! 
Coconut Cereal Cookies
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned oats
1 cup coconut
2 cups Rice Krispies
(may also add nuts and/or chocolate chips)
- Preheat oven to 375 degrees.
- In a stand mixer beat the butter and sugars. Add eggs and vanilla.
- In a separate bowl, whisk flour, baking soda and salt.
- Add dry ingredients to butter/sugar mixture. Beat.
- Add oats, coconut and Rice Krispies. Mix until just combined.
- Roll into balls, place on parchment lined baking sheet and bake for about 10 minutes, until lightly brown. Cool.
