My Family’s Favorite Jambalaya
This is one of our favorite recipes! Its a perfect cleaning out the fridge/pantry recipe and can be made in about 45 minutes. It is comfort food at it’s best. I always team it with my homemade french bread – YUM!
Ingredients
3 stalks celery
1 bell pepper
5 cloves garlic
olive oil
1 pkg Hillshire Farm Hot Links
8 cups chicken broth
fresh parsley
2 bayleaves
2 tsp thyme
2-3 cups cooked chicken
2 cans petite diced tomatoes
1 cup white rice (Basmati)
cayenne pepper
Directions
- Chop 3 stalks celery, 1 bell pepper, 5 cloves of garlic. Saute in olive.
- Slice a package of Hillshire Farm Hot Links (6 in a pkg) and add to the saute.
- Add 8 cups of chicken broth, a handful of fresh parsley, 2 bay leaves and 2 tsp of thyme.
- Bring to a boil.
- Add 2-3 cups cooked shredded or diced chicken, 2 standard cans of petite diced tomatoes, 1 cup uncooked white rice (I use Basmati) 1/8 tsp cayenne pepper.
- Simmer 25 minutes.
- You can also add shrimp if you like
