Have you ever made popovers before? They are so much fun! And, they have the same ingredients as pancakes & waffles so they perfect to add into your weekly breakfast rotation! Four ingredients, blend, bake and and eat!!

Ingredients
2 tablespoons melted butter
2 eggs
1 cup luke-warm milk (warm in the microwave for a few seconds)
1 cup all-purpose flour
1 teaspoon salt
1 tablespoon melted butter for brushing the pan
Directions
- Preheat the oven to 400 degrees. Place the muffin pan in the oven as it preheats. The pan needs to be warm, it helps the popovers “pop”.
- In a blender, blend eggs until light yellow.
- Add the warmed milk and blend.
- Add the flour, salt and 2 tablespoons of the melted butter, and blend until smooth.
- Remove the pan from the oven and brush 8 muffin cups with remaining 1 tablespoon of melted butter.
- Pour the batter into the prepared muffin tin and bake until golden, about 25 to 30 minutes. Remove from the oven and serve warm. Serve with homemade jam, lemon curd, honey, or clotted cream. You can double this recipe, adapted from Melissa d’Arabian.
