If ever there was an ultimate family recipe this would be it. I think we’ve made this cake over 100 times! We get requests to bring it to potlucks or any time a dessert is needed. The cake is so smooth you can eat 2 pieces without noticing. It’s light and creamy and soft and sweet. The icing has a brown sugar/butter base so it has a little caramel flavor to it.
Ingredients
1 ½ cup sugar
½ cup butter, soft
2 eggs
2 tsp. vanilla
1 cup sour cream
2 cups flour
½ tsp. salt
1 tsp. baking soda
1 ½ cup mashed bananas
Directions
Preheat oven to 375 degrees. Grease a sheet pan.
Beat the sugar and butter. Add eggs, vanilla and sour cream. In a separate bowl mix the dry ingredients. Add the dry ingredients to the wet ingredients alternately with the banana. Mix until just combined. Pour into a greased sheet pan. Bake for 20 minutes. Frost while warm.
Frosting
Melt 1/3 cup butter and 1/2 cup brown sugar in a saucepan on medium heat until just bubbling. Remove from heat. Add 2 tsp. vanilla, and 3 cups powdered sugar. Add ¼ cup milk. Beat with mixer until smooth. It should be slightly runny and easy to pour onto warm cake. Add milk or powdered sugar to get desired consistency. Spread on warm cake.
