I had to wipe my chocolaty fingers off to type this post 🙂 I first met this recipe when I met my husband in college. This cake was a favorite of his mom’s and quickly became a favorite of mine!! After 25 years of baking it we all still love it!! (I ate 4 pieces already). The cake has cocoa, buttermilk, and zucchini and a hint of cinnamon. It is moist and melts in your mouth. If you have picky kids, they won’t know there is zucchini in the cake at all! The topping is a mixture of brown sugar, chocolate chips and chopped nuts. Let’s get cooking!!
Chocolate Zucchini Cake
Ingredients
1/2 cup butter, soft
1 3/4 cup sugar
1/3 cup oil
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
4 tablespoons unsweetened cocoa
1/2 cup buttermilk
2 cups shredded zucchini (if you are worried about your kids seeing green, peel the zucchini before shredding it.)
Directions
Preheat oven to 325 degrees. Grease a 9×13 baking dish.
In a stand mixer, beat butter, sugar, oil, eggs and vanilla.
In a separate bowl, mix all dry ingredients.
Add the dry ingredients to the wet ingredients alternating with the buttermilk. Mix until just combined.
Add the zucchini to the mixture and mix on low until just combined.
Spread into the prepared pan.
For the topping, mix 1 cup chocolate chips, 1/2 cup nuts (or more), and 1/4 cup brown sugar. Sprinkle over batter.
Bake for 45 minutes (toothpick should come out clean).
