When we were little kids we couldn’t wait to get home from school because mom would always have home made goodies ready for us. Our favorite treat by far were these Peanut Butter Fingers. Life was good when there was a fresh batch of these sitting on the counter! The oatmeal-peanut buttery crust, the thin layer of melted chocolate and the creamy peanut butter frosting made for a little kid taste sensation! Still today, these take us right back to being a kid. We try not to make them too often because we’ve polished off an entire pan in one day! Don’t be fooled by other recipes – this one is the best!! Bake these up for your kids today!!
Peanut Butter Fingers
Ingredients
1/2 cup butter, soft
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/3 cup peanut butter
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 cup flour
1 cup oats (quick oats or regular oats)
1 1/2 cups semi-sweet chocolate chips
Frosting glaze
1/2 cup powdered sugar
1/4 cup peanut butter
2-4 tablespoons evaporated milk (you can use regular milk in a pinch)
Directions
Preheat oven to 350 degrees. Grease a 9×13 baking dish.
Beat the butter, sugar and brown sugar until light. Beat in the egg. Add the peanut butter, baking soda, salt and vanilla. Beat well. Add the flour and oats and mix until just combined.
Spread in prepared pan and bake for 15 minutes.
When pan comes out of the oven, sprinkle the chocolate chips and let sit until melted. Spread the chocolate with a knife to cover the top of the bars.
In a small bowl mix the powdered sugar, peanut butter and evaporate milk to make a peanut butter glaze.
We like the glaze to mix slightly with the chocolate, so we put the glaze on when the chocolate is still warm. Cut and devour!!
